Description

A cozy skillet meal featuring tender chicken in a creamy cottage cheese-Parmesan sauce with a hint of paprika heat.


Ingredients

  • 1 lb chicken breast or chicken thighs, cut into 1-inch cubes
  • 1 cup cottage cheese
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon oil
  • Salt, to taste


Instructions

  1. Pat the cubed chicken dry with paper towels. Season evenly with salt, paprika, and black pepper.
  2. Heat 1 tablespoon oil in a large skillet over medium heat until shimmering.
  3. Add chicken in a single layer. Cook without moving until the bottoms are golden, about 3–4 minutes.
  4. Flip the pieces and cook until cooked through and lightly golden on all sides, about another 3–4 minutes.
  5. Reduce heat to low before adding dairy ingredients to prevent curdling.
  6. Add the cottage cheese to the skillet and stir gently as it warms and begins to soften and incorporate.
  7. Sprinkle in the Parmesan gradually while stirring so the cheese melts into a smooth sauce that coats the chicken evenly.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Let the skillet simmer gently for 2–3 minutes, stirring occasionally, until the sauce thickens slightly.
  10. Remove from the heat and let rest for one minute so the sauce settles and clings to the chicken.

Notes

Serve over rice, toss with pasta, or enjoy alongside salad and bread. For storage, refrigerate or freeze the chicken without sauce for up to 2 months.
