Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup fresh lemon juice
  • Zest of 2 lemons
  • Powdered sugar for glaze


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan generously.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well incorporated.
  3. In a separate bowl, cream the softened butter with granulated sugar until it’s light and fluffy.
  4. Beat in the eggs one at a time, then mix in vanilla extract, sour cream, fresh lemon juice, and lemon zest, ensuring a smooth texture.
  5. Gradually fold the dry mixture into the wet ingredients, stirring gently until just combined.
  6. Pour the batter into your prepped loaf pan, smoothing the top with a spatula.
