Description

A flavorful chipotle-style roast chicken that’s juicy, tender, and perfect for any occasion.


Ingredients

  • 3 pounds boneless skinless chicken thighs (or chicken breasts)
  • 2 tsp olive oil
  • 4-5 tbsp water (optional)
  • 1 can chipotle peppers in adobo sauce (7 oz)
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper


Instructions

  1. Combine the chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, coriander, smoked paprika, salt, and pepper in a blender. Blend until smooth.
  2. Marinate the chicken thighs (or breasts) in the sauce for at least 1 hour, preferably overnight in the fridge.
  3. Preheat your grill, oven, or air fryer.
  4. For the grill, cook the chicken over medium heat for approximately 6-7 minutes on each side until the internal temperature reaches 165 °F.
  5. If roasting, set the chicken on a baking sheet and roast at 425 °F for 25-30 minutes.
  6. For air frying, cook at 400 °F for about 18-20 minutes.
  7. Allow the chicken to rest for a few minutes before slicing.

Notes

For the best results, let the chicken marinate overnight and ensure your grill is properly preheated.
