Description
A flavorful chipotle-style roast chicken that’s juicy, tender, and perfect for any occasion.
Ingredients
- 3 pounds boneless skinless chicken thighs (or chicken breasts)
- 2 tsp olive oil
- 4-5 tbsp water (optional)
- 1 can chipotle peppers in adobo sauce (7 oz)
- 4 tbsp fresh lime juice
- 4 tbsp fresh orange juice
- 1/2 cup fresh cilantro
- 6 garlic cloves
- 1 medium onion (quartered)
- 1 tsp cumin
- 1 tbsp dried oregano
- 1 tsp ground coriander (optional)
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Combine the chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, coriander, smoked paprika, salt, and pepper in a blender. Blend until smooth.
- Marinate the chicken thighs (or breasts) in the sauce for at least 1 hour, preferably overnight in the fridge.
- Preheat your grill, oven, or air fryer.
- For the grill, cook the chicken over medium heat for approximately 6-7 minutes on each side until the internal temperature reaches 165 °F.
- If roasting, set the chicken on a baking sheet and roast at 425 °F for 25-30 minutes.
- For air frying, cook at 400 °F for about 18-20 minutes.
- Allow the chicken to rest for a few minutes before slicing.
Notes
For the best results, let the chicken marinate overnight and ensure your grill is properly preheated.
