Bright and smoky, this Chipotle Lime Chicken Salad features grilled chicken, avocado, and corn for a refreshing meal that’s high in protein and perfect for busy weeknights.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon chipotle seasoning
- 1 tablespoon olive oil
- 1 lime, juiced
- Salt and pepper, to taste
- 4 cups mixed greens (romaine, spinach, etc.)
- 1 cup cherry tomatoes, halved
- 1/2 cup corn (fresh, frozen, or canned)
- 1/2 avocado, sliced
- 1/4 red onion, sliced
- 1/4 cup cilantro, chopped
- Additional lime juice, as desired
Instructions
- Marinate the chicken: In a bowl, combine the chicken breasts, chipotle seasoning, olive oil, lime juice, and salt and pepper. Marinate for at least 30 minutes.
- Preheat the grill: Set your grill to medium heat.
- Grill the chicken: Place the marinated chicken on the grill and cook for 6–7 minutes on each side or until the internal temperature reaches 165°F.
- Rest and slice: After grilling, allow the chicken to rest for a few minutes before slicing against the grain.
- Assemble the salad: In a bowl, combine mixed greens, cherry tomatoes, corn, avocado, red onion, and cilantro. Toss gently and top with sliced chicken and lime juice.
Notes
Letting the chicken rest after grilling ensures juiciness. Serve immediately for the best texture, especially with avocado.
