Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup sweetened shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Oil for frying
- Sweet and sour sauce for serving
Instructions
- In a large bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and onion powder.
- Dip each shrimp into the flour mixture, shaking off any excess. Then, dip it into the beaten eggs and coat it with panko breadcrumbs and shredded coconut.
- Heat oil in a deep pan over medium heat, ensuring it’s hot enough to fry.
- Fry the shrimp in batches until they turn golden brown and are cooked through, approximately 3-4 minutes per side.
- Carefully drain the shrimp on paper towels to remove excess oil, and serve them warm with sweet and sour sauce.
Notes
For best results, ensure your oil is hot before frying and avoid overcrowding the pan.
