Description

A quick and comforting skillet dinner featuring tender chicken in a creamy spinach Parmesan sauce. Perfect for weeknights or date nights.


Ingredients

  • 2 skinless, boneless chicken breasts (about 68 oz each)
  • 2 cups fresh spinach (packed)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Pat chicken dry and season both sides with salt and pepper.
  2. Heat a large skillet over medium heat and melt the butter.
  3. Add the minced garlic and sauté for 20–30 seconds until fragrant.
  4. Cook the chicken undisturbed until browned, about 6–7 minutes.
  5. Flip and cook another 6–7 minutes until an instant-read thermometer reads 165°F (74°C).
  6. Transfer the cooked chicken to a plate and tent loosely with foil to rest.
  7. Add the spinach to the same skillet and toss for 1–2 minutes until wilted.
  8. Pour in the heavy cream and bring to a gentle simmer, allowing to reduce slightly for 1–2 minutes.
  9. Remove from heat and stir in the grated Parmesan until melted and smooth.
  10. Return the chicken to the skillet, spooning sauce over it and let sit for 1–2 minutes.
  11. Taste and adjust seasoning with salt and pepper, then serve immediately.

Notes

For lighter version, use half-and-half plus 1 tbsp flour. Store leftovers in an airtight container for up to 3 days.
