Description

A quick and flavorful Cajun chicken dish with bell peppers, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil (for searing)
  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 bell peppers (red, green, or yellow), sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (for sautéing)
  • Fresh parsley or cilantro, chopped (optional)


Instructions

  1. Mix the spices: In a small bowl, combine Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and pepper.
  2. Coat the chicken: Pat the chicken dry, then rub the spice mix evenly over each breast.
  3. Sear the chicken: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When shimmering, add the chicken. Cook 6–7 minutes per side until golden and cooked through (internal temp 165°F / 74°C). Remove chicken to a plate and let rest 5 minutes.
  4. Sauté the vegetables: In the same skillet, add 1 tablespoon olive oil. Add sliced bell peppers and onion; sauté 5–6 minutes until slightly softened. Add minced garlic and cook 1–2 more minutes until fragrant.
  5. Combine and finish: Slice the rested chicken into thin strips and return to the skillet. Toss with the peppers and onions and cook 2–3 minutes so flavors marry.
  6. Garnish and serve hot with chopped parsley or cilantro if you like.

Notes

Use a meat thermometer to be precise and avoid overcooking. Serve over rice, tortillas, or with a salad.
