Description

Delightful combination of sweet and savory, these blueberry goat cheese crostinis are perfect for appetizers or snacks.

Ingredients

  • 1 baguette, sliced
  • 4 oz goat cheese
  • 1 cup fresh blueberries
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp fresh thyme
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brush the baguette slices with olive oil and lay them out on a baking sheet.
  3. Bake the slices for 8-10 minutes or until they turn golden and crispy.
  4. Combine the balsamic vinegar and honey in a small pan over medium heat.
  5. Add the fresh blueberries to the pan, cooking until they soften and release their juices.
  6. Spread goat cheese on top of each crostini once the baguette slices are ready.
  7. Spoon the warm blueberry mixture over the cheese, finishing with a sprinkle of fresh thyme.
  8. Serve immediately and enjoy this delightful treat!

Notes

Use day-old baguette for better texture when baked. If desired, add a splash of lemon juice to the blueberry mixture for extra flavor.
