Ingredients

  • 1 cup fresh blueberries
  • 1 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the softened cream cheese until well blended.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Incorporate the dry mixture into the wet mixture, mixing until just combined.
  7. Fold in the blueberries gently.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, ensure butter and cream cheese are at room temperature. Tossing blueberries in flour may prevent sinking.
