Indulge in these decadent Biscoff brownies, featuring rich chocolate and creamy cookie butter for a fudgy treat that melts in your mouth.
Ingredients
- 3/4 cup Biscoff cookie butter
- 1/2 cup light or dark brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 large egg yolk
- 1 tablespoon vanilla extract
- 10 tablespoons unsalted butter
- 2/3 cup + 1/4 cup semi-sweet chocolate chips
- 1/4 cup unsweetened Dutch cocoa powder
- 2/3 cup + 1 tablespoon all-purpose flour
- 1 teaspoon espresso powder
- 1/2 teaspoon fine sea salt
- 4-5 Biscoff cookies (for the top)
- Extra cookie butter (for finishing)
Instructions
- Press a large piece of parchment paper into an 8×8 square metal baking pan, creasing the edges. Spread cookie butter evenly inside and place it in the freezer until firm.
- Preheat your oven to 350°F (180°C).
- Whisk together the brown sugar, granulated sugar, eggs, and vanilla in a large bowl until combined.
- Melt the butter and 2/3 cup of chocolate chips together until smooth; whisk in the cocoa powder until fully incorporated.
- Mix the melted chocolate mixture into the egg mixture, stirring until just combined.
- Fold in the flour, espresso powder, and salt until fully blended.
- Pour half of the brownie batter into the prepared pan and spread it to the edges.
- Take the frozen cookie butter square and place it on top of the batter, then pour the remaining batter over it.
- Break Biscoff cookies into chunks and press them into the top of the brownie batter.
- Microwave 2 tablespoons of cookie butter until warm and drizzle on top.
- Bake in the preheated oven for 30-40 minutes. Check for doneness by testing with a toothpick; it should come out with a few moist crumbs.
- Allow the pan to cool completely on a wire rack before removing. Drizzle more cookie butter on top if desired before slicing into squares.
Notes
Serve warm or at room temperature, ideally with vanilla ice cream or whipped cream. Store in an airtight container at room temperature for up to 4 days or freeze for longer preservation.
