Ingredients
- 2 ripe mangos, peeled and diced
- 1 onion or shallot, finely chopped
- 1 jalapeño pepper, finely chopped
- ½ bell pepper, chopped (any color you prefer)
- ¼ cup fresh cilantro, chopped
- 1 garlic clove, minced
- 2 tablespoons extra virgin olive oil or avocado oil
- Juice from 1 lime (about 2 ½ teaspoons)
- ½ teaspoon sea salt or pink salt
- ⅛ teaspoon freshly ground black pepper
Instructions
- In a mixing bowl, combine the diced mangos, finely chopped onion or shallot, and jalapeño pepper.
- Add the chopped bell pepper, cilantro, and minced garlic to the bowl.
- Drizzle in the olive oil and squeeze in the lime juice.
- Sprinkle with sea salt and black pepper.
- Gently mix all the ingredients together, being careful not to mash the mango too much.
