Ingredients
- 1 whole chicken (4-5 pounds)
- 2 cups mixed vegetables (carrots, onions, potatoes)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- 4 cloves garlic (minced)
Instructions
- Preheat your oven to 375°F (190°C).
- Rub the chicken with olive oil, salt, pepper, thyme, rosemary, and garlic.
- Arrange the mixed vegetables in the bottom of the Dutch oven.
- Place the seasoned chicken on top of the vegetables.
- Cover the Dutch oven and transfer it to the preheated oven.
- Roast for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
