Description

A mouthwatering and easy recipe for roasting a whole chicken in a Dutch oven, featuring juicy meat and crisp skin alongside caramelized vegetables.


Ingredients

  • 1 whole chicken (4-5 pounds)
  • 2 cups mixed vegetables (carrots, onions, potatoes)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 4 cloves garlic (minced)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub the chicken with olive oil, salt, pepper, thyme, rosemary, and garlic.
  3. Arrange the mixed vegetables in the bottom of the Dutch oven.
  4. Place the seasoned chicken on top of the vegetables.
  5. Cover the Dutch oven and transfer it to the preheated oven.
  6. Roast for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
