Description

A quick and hearty white lasagna soup that combines the flavors of Italian sausage, creamy chicken broth, and three types of cheese.


Ingredients

  • 1 lb ground Italian sausage
  • 4 cups chicken broth
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 1 cup parmesan cheese
  • 8 oz lasagna noodles, broken
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. In a large pot, brown the sausage over medium heat.
  2. Add the chicken broth and bring to a boil.
  3. Stir in the broken lasagna noodles and cook until tender.
  4. Reduce the heat and add the ricotta, mozzarella, and parmesan cheese.
  5. Season with Italian seasoning, salt, and pepper.
  6. Simmer for a few minutes until heated through.
  7. Serve hot and enjoy!

Notes

For a creamy texture, add extra cheese or cream at the end. Works great with leftover rotisserie chicken too.
