Description
A quick and hearty white lasagna soup that combines the flavors of Italian sausage, creamy chicken broth, and three types of cheese.
Ingredients
- 1 lb ground Italian sausage
- 4 cups chicken broth
- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 1 cup parmesan cheese
- 8 oz lasagna noodles, broken
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the sausage over medium heat.
- Add the chicken broth and bring to a boil.
- Stir in the broken lasagna noodles and cook until tender.
- Reduce the heat and add the ricotta, mozzarella, and parmesan cheese.
- Season with Italian seasoning, salt, and pepper.
- Simmer for a few minutes until heated through.
- Serve hot and enjoy!
Notes
For a creamy texture, add extra cheese or cream at the end. Works great with leftover rotisserie chicken too.
