Description
Crispy shrimp tossed in a creamy, spicy sauce with a perfect balance of sweetness and heat.
Ingredients
- 1 pound large shrimp (peeled and deveined, tails removed)
- 1/2 cup buttermilk
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
- 3/4 cup cornstarch
- 1/4 cup high-quality mayonnaise
- 1 ½ tablespoons Thai sweet chili sauce
- 1-2 teaspoons Sriracha (or to taste)
Instructions
- In a medium bowl, combine the shrimp, buttermilk, salt, garlic powder, onion powder, and black pepper. Let this marinate for about 10 minutes.
- Add cornstarch to a shallow dish.
- One at a time, pull a shrimp from the marinade, shake off excess, then dredge in the cornstarch. Place on a baking sheet.
- Heat about 1½ inches of oil to 350°F in a large pot.
- Fry the shrimp in three batches for about 2 minutes, or until they’re golden brown and reach an internal temperature of 145°F. Transfer shrimp to a paper towel-lined plate.
- In a large bowl, mix mayonnaise, sweet chili sauce, and Sriracha. When the shrimp are ready, toss them in the sauce until evenly coated. Serve and enjoy!
Notes
For maximum crunch, ensure your oil is hot before frying. You can prepare shrimp and sauce ahead of time and fry just before serving.
