Description

Delightful and nutritious Banana Oatmeal Muffins, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup whole grain oats
  • 1/2 cup milk (or a dairy-free alternative)
  • 1/4 cup maple syrup (optional for sweetness)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup chocolate chips or blueberries (optional)
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Combine them with the oats.
  3. Add in the milk, maple syrup (if using), baking powder, baking soda, salt, cinnamon, oil, and vanilla extract. Mix until everything is well combined.
  4. If you’re including chocolate chips or blueberries, gently fold them into the batter.
  5. Distribute the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool for a few minutes before transferring them to a wire rack.

Notes

These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 2 months. Reheat in the microwave for about 20-30 seconds.
