Description

Delightful banana cinnamon rolls filled with warm flavors of cinnamon and ripe bananas, perfect for cozy brunches or special occasions.


Ingredients

  • 3/4 cup milk (warmed to 110℉)
  • 2 1/4 tsp active dry yeast (11 grams or 1 packet)
  • 1 large egg (room temperature and lightly beaten)
  • 2/3 cup mashed bananas (about 2 ripe bananas)
  • 5 1/4 cups all-purpose flour
  • 1 tsp salt
  • 1/4 cup white granulated sugar
  • 10 tbsp unsalted butter (room temperature and cubed)
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar (packed light or dark)
  • 1 tbsp ground cinnamon
  • 2 bananas (sliced thinly)
  • 4 oz cream cheese (room temperature)
  • 4 tbsp unsalted butter (room temperature)
  • 1 cup powdered sugar (sifted)
  • 1 tsp pure vanilla extract


Instructions

  1. Warm the milk in a small saucepan until it reaches 110℉. Remove from heat and sprinkle the yeast over the milk. Let it froth for about 5-10 minutes.
  2. In a large mixing bowl, combine the activated yeast with the beaten egg and mashed bananas, stirring gently.
  3. Add in the flour, salt, and granulated sugar. Mix until a soft dough forms.
  4. Incorporate the cubed butter, kneading until the dough is smooth and elastic.
  5. Cover the bowl and let it rise for about 1 hour, or until doubled in size.
  6. Roll out the dough into a rectangle on a floured surface. Spread softened butter over the dough and sprinkle with brown sugar and ground cinnamon.
  7. Place the sliced bananas over the sugar mixture, then roll the dough tightly to create a log. Cut into 12 equal slices.
  8. Arrange the rolls in a greased baking pan. Cover and let rise for another 30 minutes.
  9. Preheat your oven to 350℉ and bake for 20–25 minutes until golden brown.
  10. Prepare the icing by mixing the cream cheese, butter, powdered sugar, and vanilla until smooth.
  11. Once the rolls have cooled slightly, drizzle the icing over the top and enjoy!

Notes

For best flavor, use overripe bananas. You can also experiment with different sugars or flours for unique variations.
