Description

Delicious baked broccoli cheese balls are a fun and nutritious snack transformed from humble broccoli into bite-sized delights, perfect for any occasion.


Ingredients

  • 2 cups broccoli florets (finely chopped)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 1/2 cups shredded cheddar cheese
  • 1/3 cup grated Parmesan cheese
  • 2 eggs
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Cooking spray (for greasing the baking sheet)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Steam the broccoli florets for 3-5 minutes until they are tender-crisp, then let them cool and chop finely.
  3. In a large mixing bowl, combine the chopped broccoli, breadcrumbs, shredded cheddar, Parmesan, eggs, and flour.
  4. Add garlic powder, onion powder, salt, and pepper, and mix everything until well combined.
  5. Roll the mixture into 1-inch balls and place them on a parchment-lined or greased baking sheet.
  6. Bake for 20-25 minutes until golden brown. For extra crispiness, broil for an additional 1-2 minutes, keeping a close watch.
  7. Allow to cool slightly before serving warm, ideally with marinara or ranch dip.

Notes

Store leftovers in an airtight container for up to 3 days or freeze unbaked balls for up to 2 months. Reheat from frozen at 350°F (175°C) for 15-20 minutes.
