Ingredients
- 1 lb flank steak or skirt steak
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lime, juiced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Corn tortillas
- Diced onion
- Chopped cilantro
- Fresh lime wedges
Instructions
- In a large bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and pepper to create the marinade.
- Add the steak, ensuring it’s well-coated in the marinade. Let it sit for at least 30 minutes, or up to several hours for the best flavor.
- Preheat your grill to high heat. Grill the steak for about 5-7 minutes per side, checking to ensure it’s cooked to your preference.
- Once done, let the steak rest for a few minutes, then slice it thinly against the grain for maximum tenderness.
- Warm the corn tortillas on the grill or in a skillet until they’re pliable.
