Ingredients
- 6 large eggs
- 1/4 cup heavy cream (about 60 ml)
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped cooked bacon
- 1/4 cup chopped bell pepper
- 1/4 cup chopped onion
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Whisk together the eggs and heavy cream until smooth and frothy. Season lightly with salt and pepper.
- Fold in the shredded cheddar cheese, bacon, bell pepper, and onion until evenly distributed.
- Pour the mixture into the greased muffin cups, filling each about two-thirds full.
- Bake for 18–20 minutes until set and lightly golden on top.
- Let cool for a few minutes before removing the muffins from the tin.
Notes
Use room-temperature eggs for a more even bake. Store cooled muffins in an airtight container for up to 4 days.
