A quick and flavorful chicken salad featuring sweet-tart apples, crunchy walnuts, and tender chicken, all coated in a lemony Dijon dressing.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup chopped crisp apple (Honeycrisp or Fuji), about 1 medium apple
  • 1/2 cup chopped walnuts
  • 1/4 cup finely chopped celery
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Lettuce cups, bread, or crackers for serving


Instructions

  1. Prep your ingredients: Wash and core the apple, then chop into 1/2-inch pieces. Finely chop the celery and coarsely chop the walnuts. Shred the cooked chicken into bite-sized pieces.
  2. Make the dressing: In a small bowl, whisk together the mayonnaise (or Greek yogurt), Dijon mustard, and fresh lemon juice until smooth.
  3. Combine the main ingredients: In a large bowl, add the shredded chicken, chopped apple, walnuts, and celery.
  4. Dress the salad: Pour the dressing over the chicken-apple mixture and gently fold until evenly coated.
  5. Season and serve: Taste and season with salt and black pepper. Serve immediately on lettuce cups, bread, or crackers.

Notes

For extra crunch, add walnuts right before serving. To prevent apples from browning, toss with a bit of lemon juice.
