Ingredients

  • 2 lbs fresh strawberries
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 16 oz pre-baked cake (such as pound cake or angel food cake)
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tbsp fresh lemon juice
  • Fresh mint (optional for garnish)


Instructions

  1. Wash and prepare strawberries: Rinse the strawberries under cold water, hull them, and slice them into even pieces.
  2. Macerate: In a medium bowl, combine sliced strawberries with granulated sugar and lemon juice. Toss gently to coat and let them sit at room temperature for 20-30 minutes.
  3. Chill your bowl: Chill a glass or metal bowl in the freezer for about 10 minutes.
  4. Whip the cream: Pour cold heavy whipping cream into the chilled bowl and add powdered sugar and vanilla extract. Mix until stiff peaks form.
  5. Cube the cake: Cut the pre-baked cake into 1-inch cubes.
  6. Layer the dessert: In serving dishes, layer cake cubes, press them down gently, spoon macerated strawberries with syrup over the cake, then add a layer of whipped cream.
  7. Repeat: Continue layering cake, strawberries, and cream until dishes are filled.
