Ingredients
- 2 lbs fresh strawberries
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 16 oz pre-baked cake (such as pound cake or angel food cake)
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tbsp fresh lemon juice
- Fresh mint (optional for garnish)
Instructions
- Wash and prepare strawberries: Rinse the strawberries under cold water, hull them, and slice them into even pieces.
- Macerate: In a medium bowl, combine sliced strawberries with granulated sugar and lemon juice. Toss gently to coat and let them sit at room temperature for 20-30 minutes.
- Chill your bowl: Chill a glass or metal bowl in the freezer for about 10 minutes.
- Whip the cream: Pour cold heavy whipping cream into the chilled bowl and add powdered sugar and vanilla extract. Mix until stiff peaks form.
- Cube the cake: Cut the pre-baked cake into 1-inch cubes.
- Layer the dessert: In serving dishes, layer cake cubes, press them down gently, spoon macerated strawberries with syrup over the cake, then add a layer of whipped cream.
- Repeat: Continue layering cake, strawberries, and cream until dishes are filled.
- Final touches: Finish with a dollop of cream on top and garnish with whole strawberries or mint if desired.
- Chill: Cover and chill in the refrigerator for at least an hour before serving.
