Description

These shrimp tacos feature zesty marinated shrimp and a creamy slaw, making for a vibrant, quick, and delightful weeknight meal.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice, freshly squeezed
  • 8 small corn or flour tortillas
  • 2 cups cabbage, shredded
  • 1/2 cup mayonnaise
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Marinate the shrimp: In a bowl, combine shrimp with lime juice, cilantro, chili powder, cumin, salt, and pepper. Let it marinate for at least 15 minutes.
  2. Prepare the slaw: In another bowl, mix together shredded cabbage, mayonnaise, a bit of lime juice, and season with salt and pepper until well combined.
  3. Cook the shrimp: Heat oil in a skillet over medium-high heat. Add the marinated shrimp and cook for 3-4 minutes until opaque and pink.
  4. Warm the tortillas: Quickly warm tortillas in a dry skillet or microwave until pliable.
  5. Assemble tacos: Place cooked shrimp on each tortilla, topped with creamy slaw. Garnish with extra cilantro, if desired.
  6. Serve immediately with lime wedges on the side.

Notes

For an even deeper flavor, marinate the shrimp for up to an hour. Use fresh, wild-caught shrimp for best results. Adjust the spices to suit your taste, especially for kids.
