Ingredients
- 1 lb ground beef
- 2 medium potatoes, diced
- 1 cup salsa (choose your favorite)
- Sopes (thick corn tortillas)
- Shredded lettuce (for garnish)
- Sour cream (for garnish)
- Cheese (optional, for garnish)
- Salt and pepper to taste
Instructions
- In a skillet, cook the ground beef over medium heat until it’s nicely browned. Drain excess fat if necessary.
- Add the diced potatoes and continue cooking until they are tender – about 10-15 minutes.
- Stir in the salsa, and season generously with salt and pepper.
- Allow the mixture to simmer for about 5-10 minutes, letting all the flavors meld together beautifully.
- In another pan, warm the sopes until they’re soft and pliable.
- Top each sope with the picadillo mixture, ensuring it’s heaped generously.
- Garnish with shredded lettuce, a dollop of sour cream, and sprinkle cheese if desired.
