Description

A delightful blend of seasoned ground beef and tender potatoes served on thick corn tortillas, perfect for family gatherings.


Ingredients

  • 1 lb ground beef
  • 2 medium potatoes, diced
  • 1 cup salsa (choose your favorite)
  • Sopes (thick corn tortillas)
  • Shredded lettuce (for garnish)
  • Sour cream (for garnish)
  • Cheese (optional, for garnish)
  • Salt and pepper to taste


Instructions

  1. In a skillet, cook the ground beef over medium heat until it’s nicely browned. Drain excess fat if necessary.
  2. Add the diced potatoes and continue cooking until they are tender – about 10-15 minutes.
  3. Stir in the salsa, and season generously with salt and pepper.
  4. Allow the mixture to simmer for about 5-10 minutes, letting all the flavors meld together beautifully.
  5. In another pan, warm the sopes until they’re soft and pliable.
  6. Top each sope with the picadillo mixture, ensuring it’s heaped generously.
