Description

A delightful blend of seasoned beef, cheesy goodness, and zesty toppings baked into a comforting casserole that appeals to both kids and adults.


Ingredients

  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 10 corn tortillas, cut in half
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sour cream
  • ¼ cup chopped green onions (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef thoroughly and drain excess fat.
  3. Stir in the taco seasoning and diced tomatoes, allowing to simmer for a few minutes.
  4. Create the base by layering half of the corn tortillas at the bottom of the baking dish.
  5. Top tortillas with half of the beef mixture and add the drained black beans.
  6. Sprinkle half of the shredded cheddar cheese over the mixture.
  7. Repeat layering with the remaining tortillas, remaining beef mixture, and finish with the remaining cheese on top.
  8. Bake for 25-30 minutes, or until the casserole is golden brown and bubbly.
  9. Allow to sit for 10 minutes before slicing and serving. Garnish with green onions and a dollop of sour cream.

Notes

For spicier flavor, use a spicier taco seasoning or add sliced chilies. Let the casserole rest after baking for easier serving.
