A delightful blend of seasoned beef, cheesy goodness, and zesty toppings baked into a comforting casserole that appeals to both kids and adults.
Ingredients
- 1 lb lean ground beef
- 2 tbsp taco seasoning
- 1 can (14.5 oz) diced tomatoes, undrained
- 10 corn tortillas, cut in half
- 2 cups shredded cheddar cheese
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup sour cream
- ¼ cup chopped green onions (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, brown the ground beef thoroughly and drain excess fat.
- Stir in the taco seasoning and diced tomatoes, allowing to simmer for a few minutes.
- Create the base by layering half of the corn tortillas at the bottom of the baking dish.
- Top tortillas with half of the beef mixture and add the drained black beans.
- Sprinkle half of the shredded cheddar cheese over the mixture.
- Repeat layering with the remaining tortillas, remaining beef mixture, and finish with the remaining cheese on top.
- Bake for 25-30 minutes, or until the casserole is golden brown and bubbly.
- Allow to sit for 10 minutes before slicing and serving. Garnish with green onions and a dollop of sour cream.
Notes
For spicier flavor, use a spicier taco seasoning or add sliced chilies. Let the casserole rest after baking for easier serving.
