Taco Bake Casserole combines the best of taco night and comfort food into one easy dish, perfect for busy weeknights.
Ingredients
- 1 pound ground beef (or turkey/plant-based alternative)
- 1 packet taco seasoning
- 8 small corn tortillas
- 2 cups shredded cheese (Cheddar or Mexican blend)
- 1 can refried beans
- 1 cup salsa
- Sour cream, to taste
- Green onions, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat until cooked through. Drain excess fat.
- Stir in the taco seasoning, following package instructions.
- In a baking dish, layer the bottom with four corn tortillas.
- Spread half of the refried beans over the tortillas.
- Spoon half of the seasoned ground beef mixture on top of the beans.
- Pour half of the salsa evenly over the beef.
- Add a layer of cheese over the salsa.
- Repeat the layers: tortillas, beans, meat, salsa, and cheese.
- Finish by topping with a final layer of cheese.
- Bake for 25-30 minutes, until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
For added flavor, sauté chopped onions and bell peppers with the beef. Customize layers with corn or black beans.
