Description

Taco Bake Casserole combines the best of taco night and comfort food into one easy dish, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef (or turkey/plant-based alternative)
  • 1 packet taco seasoning
  • 8 small corn tortillas
  • 2 cups shredded cheese (Cheddar or Mexican blend)
  • 1 can refried beans
  • 1 cup salsa
  • Sour cream, to taste
  • Green onions, to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat until cooked through. Drain excess fat.
  3. Stir in the taco seasoning, following package instructions.
  4. In a baking dish, layer the bottom with four corn tortillas.
  5. Spread half of the refried beans over the tortillas.
  6. Spoon half of the seasoned ground beef mixture on top of the beans.
  7. Pour half of the salsa evenly over the beef.
  8. Add a layer of cheese over the salsa.
  9. Repeat the layers: tortillas, beans, meat, salsa, and cheese.
  10. Finish by topping with a final layer of cheese.
  11. Bake for 25-30 minutes, until the cheese is bubbly and golden brown.
  12. Let it cool for a few minutes before serving.

Notes

For added flavor, sauté chopped onions and bell peppers with the beef. Customize layers with corn or black beans.
