Description

Crispy, golden potato nests filled with savory ground beef and topped with gooey mozzarella cheese – a perfect family weeknight dinner.


Ingredients

  • 3-5 large potatoes
  • 3.5 tbsp butter
  • A bunch of fresh dill, chopped
  • Salt to taste
  • Smoked paprika
  • Black pepper
  • Oregano
  • 1.1 lbs ground beef
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 large tomato, diced
  • 2.5 oz tomato paste
  • A bunch of fresh parsley, chopped
  • 3.5 oz mozzarella cheese, grated


Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, dill, salt, paprika, black pepper, and oregano until creamy.
  2. Preheat your oven to 375°F (190°C).
  3. In a skillet, heat oil and sauté onion, garlic, and bell pepper until softened. Add ground beef and cook until browned. Stir in tomato and tomato paste, simmering to meld flavors.
  4. Grease a muffin tin and shape the mashed potatoes into nests, creating a well for the filling.
  5. Spoon the beef mixture into each nest and top with mozzarella cheese.
  6. Bake for 20-25 minutes or until the cheese is melted and golden brown.
  7. Garnish with fresh parsley before serving.

Notes

For alternatives, substitute ground turkey or chicken for beef, or switch mozzarella with cheddar for a different flavor.
