Crispy, golden potato nests filled with savory ground beef and topped with gooey mozzarella cheese – a perfect family weeknight dinner.
Ingredients
- 3-5 large potatoes
- 3.5 tbsp butter
- A bunch of fresh dill, chopped
- Salt to taste
- Smoked paprika
- Black pepper
- Oregano
- 1.1 lbs ground beef
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 large tomato, diced
- 2.5 oz tomato paste
- A bunch of fresh parsley, chopped
- 3.5 oz mozzarella cheese, grated
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, dill, salt, paprika, black pepper, and oregano until creamy.
- Preheat your oven to 375°F (190°C).
- In a skillet, heat oil and sauté onion, garlic, and bell pepper until softened. Add ground beef and cook until browned. Stir in tomato and tomato paste, simmering to meld flavors.
- Grease a muffin tin and shape the mashed potatoes into nests, creating a well for the filling.
- Spoon the beef mixture into each nest and top with mozzarella cheese.
- Bake for 20-25 minutes or until the cheese is melted and golden brown.
- Garnish with fresh parsley before serving.
Notes
For alternatives, substitute ground turkey or chicken for beef, or switch mozzarella with cheddar for a different flavor.
