Ingredients
- 1 pound cake loaf, sliced into thin sheets
- 8 oz cream cheese, softened
- 1/2–3/4 cup powdered sugar, sifted
- 1 tsp vanilla extract
- 1–2 cups fresh strawberries, hulled and sliced
- 1/2 cup crushed shortbread cookies
- 4 oz white chocolate (or white candy melts)
- Pink sugar sprinkles
Instructions
- Slice the pound cake into thin sheets.
- In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Spread a thin layer of the cream cheese mixture on each cake slice, leaving a small border around the edges.
- At the edge closest to you, add a few slices of fresh strawberries and a sprinkle of crushed shortbread.
- Carefully roll the cake slice tightly, forming a sushi roll.
- Melt the white chocolate, and using a spoon, drizzle it over the rolls. Sprinkle pink sugar over the top for a festive touch.
- Chill the rolls in the refrigerator for about 30 minutes before serving to ensure they hold their shape.
Notes
For best results, ensure your cream cheese is adequately softened before mixing. Adjust powdered sugar based on sweetness preference. Use a serrated knife for clean slicing.
