Delightful and healthy Strawberry Oatmeal Bars blending the chewy goodness of rolled oats with a luscious strawberry filling, perfect for breakfast or snacks.
Ingredients
- 2 cups rolled oats
- 1 cup almond flour
- 1/2 cup maple syrup or agave nectar
- 1/3 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup strawberry filling (fresh strawberries or jam)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a large bowl, combine rolled oats, almond flour, baking soda, and salt.
- In another bowl, melt coconut oil and mix it with maple syrup and vanilla extract until blended.
- Pour the wet mixture into the dry ingredients and mix until fully combined.
- Press half of the oat mixture into the bottom of your prepared pan.
- Spread the strawberry filling evenly over the base layer.
- Crumble the remaining mixture on top of the strawberries.
- Bake for 25-30 minutes, or until the top is golden brown.
- Allow to cool completely before cutting into squares.
Notes
For a deeper flavor, you can use coconut sugar instead of maple syrup. Store in an airtight container for up to 3 days.
