Description

Delightful and healthy Strawberry Oatmeal Bars blending the chewy goodness of rolled oats with a luscious strawberry filling, perfect for breakfast or snacks.


Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup maple syrup or agave nectar
  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup strawberry filling (fresh strawberries or jam)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a large bowl, combine rolled oats, almond flour, baking soda, and salt.
  3. In another bowl, melt coconut oil and mix it with maple syrup and vanilla extract until blended.
  4. Pour the wet mixture into the dry ingredients and mix until fully combined.
  5. Press half of the oat mixture into the bottom of your prepared pan.
  6. Spread the strawberry filling evenly over the base layer.
  7. Crumble the remaining mixture on top of the strawberries.
  8. Bake for 25-30 minutes, or until the top is golden brown.
  9. Allow to cool completely before cutting into squares.

Notes

For a deeper flavor, you can use coconut sugar instead of maple syrup. Store in an airtight container for up to 3 days.
