Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 2 cups low-sodium chicken broth
- 1 cup rice (white or brown)
- Fresh parsley for garnish
Instructions
- In a mixing bowl, combine the lemon juice, olive oil, oregano, garlic powder, salt, and pepper.
- Place the chicken breasts into your slow cooker and pour the lemon herb mixture over them, ensuring they are well-coated.
- Add the low-sodium chicken broth to the slow cooker for moisture and flavor.
- Set your slow cooker to ‘low’ for 360 minutes or ‘high’ for 240 minutes until the chicken is fully cooked and tender.
