Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 2 cups low-sodium chicken broth
  • 1 cup rice (white or brown)
  • Fresh parsley for garnish


Instructions

  1. In a mixing bowl, combine the lemon juice, olive oil, oregano, garlic powder, salt, and pepper.
  2. Place the chicken breasts into your slow cooker and pour the lemon herb mixture over them, ensuring they are well-coated.
