Description

Juicy, tender chicken cooked slowly to perfection with zesty lemon and fragrant herbs, perfect for busy weeknights and special gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 2 cups low-sodium chicken broth
  • 1 cup rice (white or brown)
  • Fresh parsley for garnish


Instructions

  1. In a mixing bowl, combine the lemon juice, olive oil, oregano, garlic powder, salt, and pepper.
  2. Place the chicken breasts into your slow cooker and pour the lemon herb mixture over them, ensuring they’re well-coated.
  3. Add the low-sodium chicken broth to the slow cooker for moisture and flavor.
  4. Set your slow cooker to ‘low’ for 6-7 hours or ‘high’ for 3-4 hours until the chicken is fully cooked and tender.
  5. About 30 minutes before serving, stir in the rice to cook along with the chicken.
  6. Once the rice is cooked, fluff it gently with a fork and serve the chicken on top.
  7. Garnish with fresh parsley before serving.

Notes

For extra flavor, marinate the chicken for a couple of hours or overnight. Adjust seasonings to your preference and experiment with rice additions.
