A vibrant, hearty meal bringing the flavors of a classic burrito to your table, perfect for busy weeknights or entertaining.
Ingredients
- 1 lb chicken breast (can use thighs for more flavor)
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa (choose your preferred spiciness)
- 1 tsp taco seasoning (adjust for heat)
- 4 cups cooked rice (brown or white)
- Optional Toppings: Shredded cheese, Sour cream, Avocado, Fresh cilantro
Instructions
- Place the chicken breast at the bottom of the slow cooker.
- Add the drained black beans, corn, salsa, and taco seasoning on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender.
- Shred the chicken with two forks in the cooker and mix it with the other ingredients.
- Serve over cooked rice and garnish with optional toppings.
Notes
For a spicier kick, use medium or hot salsa and adjust taco seasoning. Leftovers can be stored in an airtight container for 3-4 days.
