Description

A vibrant, hearty meal bringing the flavors of a classic burrito to your table, perfect for busy weeknights or entertaining.


Ingredients

  • 1 lb chicken breast (can use thighs for more flavor)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa (choose your preferred spiciness)
  • 1 tsp taco seasoning (adjust for heat)
  • 4 cups cooked rice (brown or white)
  • Optional Toppings: Shredded cheese, Sour cream, Avocado, Fresh cilantro


Instructions

  1. Place the chicken breast at the bottom of the slow cooker.
  2. Add the drained black beans, corn, salsa, and taco seasoning on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender.
  4. Shred the chicken with two forks in the cooker and mix it with the other ingredients.
  5. Serve over cooked rice and garnish with optional toppings.

Notes

For a spicier kick, use medium or hot salsa and adjust taco seasoning. Leftovers can be stored in an airtight container for 3-4 days.
