Description

A warm and comforting cheesy shrimp casserole that’s perfect for potlucks and family dinners.

Ingredients

  • 2 pounds large shrimp (21-24 count), peeled and deveined
  • 1 tablespoon Old Bay seasoning
  • 2/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter (plus more to grease the pan)
  • 1/2 cup panko bread crumbs
  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded medium cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 2 1/2 quart casserole dish with butter.
  2. Bring a large pot of salted water to a boil. Stir in the Old Bay seasoning.
  3. Add the shrimp and cook for about 30 seconds, or until they turn opaque. Drain and transfer to a bowl.
  4. In that bowl, add mayonnaise, garlic powder, and pepper to the shrimp. Stir until well coated.
  5. Fold in the shredded mozzarella and cheddar cheese, mixing thoroughly.
  6. Transfer the shrimp mixture into the prepared casserole dish.
  7. In a small pan, melt the butter and mix it with panko bread crumbs. Sprinkle this topping over the shrimp mixture.
  8. Bake uncovered for 13-15 minutes, or until the center reaches 145°F.
  9. For an extra golden finish, broil for 1-2 minutes, then allow the casserole to rest for 15 minutes before serving.

Notes

Serve alongside a fresh green salad or buttery garlic bread. For a touch of tang, add a squeeze of lemon just before serving.
