A warm and comforting cheesy shrimp casserole that’s perfect for potlucks and family dinners.
Ingredients
- 2 pounds large shrimp (21-24 count), peeled and deveined
- 1 tablespoon Old Bay seasoning
- 2/3 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1 tablespoon butter (plus more to grease the pan)
- 1/2 cup panko bread crumbs
- 4 ounces shredded mozzarella cheese
- 4 ounces shredded medium cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C) and grease a 2 1/2 quart casserole dish with butter.
- Bring a large pot of salted water to a boil. Stir in the Old Bay seasoning.
- Add the shrimp and cook for about 30 seconds, or until they turn opaque. Drain and transfer to a bowl.
- In that bowl, add mayonnaise, garlic powder, and pepper to the shrimp. Stir until well coated.
- Fold in the shredded mozzarella and cheddar cheese, mixing thoroughly.
- Transfer the shrimp mixture into the prepared casserole dish.
- In a small pan, melt the butter and mix it with panko bread crumbs. Sprinkle this topping over the shrimp mixture.
- Bake uncovered for 13-15 minutes, or until the center reaches 145°F.
- For an extra golden finish, broil for 1-2 minutes, then allow the casserole to rest for 15 minutes before serving.
Notes
Serve alongside a fresh green salad or buttery garlic bread. For a touch of tang, add a squeeze of lemon just before serving.
