A warm, protein-rich breakfast casserole blending cottage cheese, eggs, and apples for a comforting but healthy start to your day.
Ingredients
- 2 cups cottage cheese
- 4 large eggs
- 2 apples, diced
- 1 teaspoon ground cinnamon
- 1/2 cup rolled oats (optional)
- 1/4 cup honey or maple syrup (optional)
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, whisk the cottage cheese and eggs until uniform.
- Stir in the diced apples and cinnamon, then add oats, honey or maple syrup, vanilla extract, and salt. Mix until combined.
- Pour the mixture into the baking dish and smooth the top.
- Bake for 30–35 minutes until the center is set and the top is lightly golden.
- Allow to cool for a few minutes before slicing. Serve warm or at room temperature.
Notes
For a smoother bake, pulse cottage cheese in a blender before mixing. Use certified gluten-free oats if needed.
