Ingredients

  • 1 pound beef dumplings (store-bought frozen or refrigerated)
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 1 cup sliced green onions (reserve a handful for garnish)
  • 1 cup sliced mushrooms (white or cremini)
  • 1 medium carrot, thinly sliced into ribbons
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated or finely minced
  • Soy sauce, to taste
  • Salt and pepper, to taste


Instructions

  1. In a large pot, bring the chicken broth and water to a rolling boil over medium-high heat.
  2. Add the sliced mushrooms, carrot, minced garlic, and grated ginger. Reduce the heat to a gentle boil and cook until the vegetables are tender, about 4-5 minutes.
  3. Gently add the beef dumplings to the pot. Lower the heat so the broth is simmering. Cook the dumplings according to package instructions, typically for 6-8 minutes if they’re frozen.
  4. Once the dumplings are heated through, stir in the sliced green onions. Taste and season with soy sauce, salt, and pepper as desired.
