Description

A comforting and nourishing potsticker soup featuring fresh greens and savory broth, perfect for weeknights or gatherings.

Ingredients

  • Potstickers (either pre-made or homemade)
  • Chicken or vegetable broth
  • Fresh greens (such as Bok choy or spinach)
  • Garlic (minced)
  • Fresh ginger
  • Soy sauce
  • Green onions (for garnish)
  • Sesame oil
  • Salt and pepper (to taste)

Instructions

  1. In a large pot, warm some sesame oil over medium heat.
  2. Add minced garlic and ginger, sautéing until fragrant (about one minute).
  3. Pour in the broth and bring it to a simmer.
  4. Add your potstickers, cooking according to package instructions until they’re heated through.
  5. Stir in the fresh greens and soy sauce, cooking just until the greens are wilted.
  6. Season with salt and pepper to your taste—serve hot, garnished with sliced green onions.

Notes

For a vegetarian option, use vegetable broth and tofu potstickers. Garnish with chili oil for a spicy kick.
