Ingredients
- 2 lbs potatoes (Russet, Yukon Gold, or red)
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp paprika
- Fresh herbs (like rosemary or thyme) for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and dice the potatoes into even-sized chunks.
- Toss the potato chunks with olive oil, salt, pepper, garlic powder, and paprika in a large bowl.
- Spread the potatoes out in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes, turning halfway through until golden and crispy.
- Remove from the oven, sprinkle with fresh herbs, and serve warm.
Notes
For extra crunch, consider leaving the skins on and cutting potatoes smaller. You can try adding chili powder, lemon zest, or caramelized onions for variations.
