Ingredients
- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Optional: fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil or parchment paper for quick cleanup.
- Pat the chicken thighs dry with paper towels to achieve that crispy skin.
- Place the thighs on the prepared baking sheet.
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and oregano to create a spice blend.
- Brush or drizzle the olive oil over each chicken thigh.
- Generously sprinkle the seasoning mix over the thighs, making sure to coat them evenly.
- Bake the chicken for 35-45 minutes until the skin is crispy and golden brown and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for five minutes before serving.
- Garnish with freshly chopped parsley for that pop of color and flavor.
