Ingredients
- 2 large sweet potatoes
- 4 slices of bacon
- 4 eggs, cooked to your preference
- 1 cup shredded cheese (cheddar recommended)
- Salt and pepper to taste
- Chives or green onions for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Wash sweet potatoes thoroughly and pierce with a fork. Bake directly on the oven rack for 45 to 60 minutes until tender.
- While the sweet potatoes are roasting, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and crumble into smaller pieces.
- Using the same skillet, cook the eggs as desired—scrambled, sunny side up, or poached.
- Once the sweet potatoes are done (allow them to cool for about 5 minutes), slice in half and scoop out a bit of flesh to create space for toppings.
- Fill each half with layers of bacon and eggs, then top generously with shredded cheese. Return to the oven for an additional 5 to 10 minutes until the cheese is melted and bubbly.
- Season with salt, pepper, and garnish with chives or green onions before serving.
Notes
Feel free to swap bacon for turkey bacon or go vegetarian with sautéed mushrooms or spinach. For extra flavor, consider adding spices like paprika to the eggs.
