Description

A warm and savory Italian sausage soup perfect for chilly nights, combining sausage, vegetables, and tomatoes in a comforting broth.


Ingredients

  • 1 pound Italian sausage (mild or hot)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • 4 cups chicken broth (or vegetable broth)
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 cups baby spinach or chopped kale
  • Grated Parmesan cheese, for serving


Instructions

  1. Heat a large pot over medium heat and add the Italian sausage, breaking it up with a spoon. Cook until browned, about 6–8 minutes. Drain excess fat if desired.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3–4 minutes.
  3. Stir in the diced carrots, celery, and chopped bell pepper. Cook for about 5 minutes until the vegetables begin to soften.
  4. Pour in the diced tomatoes with juices and the chicken broth. Sprinkle in the Italian seasoning and stir to combine. Increase heat to bring to a boil.
  5. Once boiling, reduce the heat to low and simmer, partially covered, for 20 minutes.
  6. Add the spinach or kale and cook for another 3–5 minutes until the greens are wilted and tender.
  7. Taste and season with salt and black pepper as needed.
  8. Ladle into bowls and serve hot with grated Parmesan on top.

Notes

For a creamier soup, stir in 1/2 cup of heavy cream or a splash of half-and-half at the end. This dish can be made with turkey or chicken sausage for a leaner option.
