Ingredients
- 4 pieces Chicken Breasts (boneless, skinless)
- 3 tablespoons Honey (for marinade)
- 2 tablespoons Lime Juice (freshly squeezed)
- 1 tablespoon Lime Zest
- 2 cloves Garlic (minced)
- 1 teaspoon Ground Cumin
- to taste Salt
- to taste Pepper
- 1 cup Jasmine Rice (or basmati)
- 2 cups Chicken Broth
- 2 pieces Avocado (diced)
- 1 small Red Onion (finely chopped)
- 1/4 cup Fresh Cilantro (chopped)
- 1 tablespoon Olive Oil
- 4 pieces Lime Wedges (for garnish)
Instructions
- Marinate the chicken with honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper. Cover and refrigerate for at least 30 minutes.
- In a medium pot, combine jasmine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer until rice is cooked, about 15 minutes.
- While the rice cooks, heat olive oil in a skillet over medium heat. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked.
- Allow the chicken to rest for a few minutes before slicing it into strips.
- Fluff the rice and stir in diced avocado, red onion, and fresh cilantro.
- Layer the rice, chicken, more avocado, and cilantro to create a stack. Garnish with lime wedges.
Notes
For extra flavor, allow the chicken to marinate overnight. Consider adding Greek yogurt to the avocado for creaminess.
