Description

A delightful stack of chicken and rice bursting with zesty honey and lime flavors, accompanied by creamy avocado.


Ingredients

  • 4 pieces Chicken Breasts (boneless, skinless)
  • 3 tablespoons Honey (for marinade)
  • 2 tablespoons Lime Juice (freshly squeezed)
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Cumin
  • to taste Salt
  • to taste Pepper
  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth
  • 2 pieces Avocado (diced)
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)


Instructions

  1. Marinate the chicken with honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper. Cover and refrigerate for at least 30 minutes.
  2. In a medium pot, combine jasmine rice and chicken broth. Bring to a boil, then reduce heat to low and cover, simmering until rice is cooked, about 15 minutes.
  3. Heat olive oil in a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked.
  4. Allow the chicken to rest for a few minutes before slicing it into strips.
  5. Fluff the rice with a fork and stir in diced avocado, red onion, and fresh cilantro.
  6. To serve, stack rice on the bottom, layered with chicken, topped with more avocado and cilantro, and garnish with lime wedges.

Notes

For added zesty kick, consider including diced jalapeños in the avocado mix.
