Description

A delightful dish combining tender chicken thighs and aromatic rice in a sweet and tangy honey BBQ glaze, perfect for busy weeknights or family gatherings.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish


Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove from pan and set aside.
  3. In a bowl, mix the BBQ sauce, honey, soy sauce, and minced garlic.
  4. Toast the uncooked rice in the same pan for 1–2 minutes until slightly nutty.
  5. Pour in the chicken broth and half of the BBQ mixture, stirring well.
  6. Return the chicken to the pan and drizzle the remaining sauce over it.
  7. Cover the pan and simmer on low heat for 15 minutes.
  8. Add mixed vegetables and cook for an additional 5 minutes or until the rice is tender and the chicken is cooked.
  9. Remove from heat and let sit for 5 minutes.
  10. Garnish with chopped green onions before serving.

Notes

Can substitute chicken thighs for breasts or use brown rice for a healthier option. Store leftovers in an airtight container in the fridge for up to 3 days.
