Ingredients
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Oregano
- 1 tsp Thyme
- 1 tsp Paprika
- 1 tsp Chilli Powder
- 800 g Chicken Breast, cut into halves
- 1.5 tbsp Cajun Seasoning Mix
- 2 tsp Olive Oil
- 25 g Grass Fed Butter (for cooking)
- 1 Medium Red Onion, chopped
- 4-5 Garlic Cloves, chopped
- 1/2 tbsp Cajun Seasoning Mix (for the rice)
- Fresh Parsley (for garnish)
- 15 g Grass Fed Butter
- 250 ml Milk
- 150 g Light Cream Cheese
- 40 g Parmesan
Instructions
- Marinate the Chicken: Combine the chicken with Cajun seasoning and olive oil in an airtight container and marinate overnight.
- Cook the Chicken: Heat a pan over medium-high heat, melt the grass-fed butter, and cook the chicken until golden. Let rest before slicing.
- Sauté the Aromatics: In the same pan, sauté the chopped red onion and garlic, then add the remaining Cajun seasoning and rice, stirring to coat.
- Make the Sauce: Lower heat, melt additional butter, whisk in milk, light cream cheese, and Parmesan until smooth.
- Assemble the Dish: Layer Cajun rice on a plate, top with sliced chicken, drizzle with sauce, and garnish with parsley.
Notes
Marinate the chicken the night before for maximum flavor. Use a cast iron skillet for the best crust. Freshly cooked rice can be used if day-old is not available.
