Description

A vibrant and satisfying high-protein dish featuring marinated chicken, creamy sauce, and aromatic rice, perfect for busy weeknights or special gatherings.


Ingredients

  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Paprika
  • 1 tsp Chilli Powder
  • 800 g Chicken Breast, cut into halves
  • 1.5 tbsp Cajun Seasoning Mix
  • 2 tsp Olive Oil
  • 25 g Grass Fed Butter (for cooking)
  • 1 Medium Red Onion, chopped
  • 4-5 Garlic Cloves, chopped
  • 1/2 tbsp Cajun Seasoning Mix (for the rice)
  • Fresh Parsley (for garnish)
  • 15 g Grass Fed Butter
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan


Instructions

  1. Marinate the Chicken: Combine the chicken with Cajun seasoning and olive oil in an airtight container and marinate overnight.
  2. Cook the Chicken: Heat a pan over medium-high heat, melt the grass-fed butter, and cook the chicken until golden. Let rest before slicing.
  3. Sauté the Aromatics: In the same pan, sauté the chopped red onion and garlic, then add the remaining Cajun seasoning and rice, stirring to coat.
  4. Make the Sauce: Lower heat, melt additional butter, whisk in milk, light cream cheese, and Parmesan until smooth.
  5. Assemble the Dish: Layer Cajun rice on a plate, top with sliced chicken, drizzle with sauce, and garnish with parsley.

Notes

Marinate the chicken the night before for maximum flavor. Use a cast iron skillet for the best crust. Freshly cooked rice can be used if day-old is not available.
