Description

Indulgent yet protein-packed oven-baked cottage cheese pancakes, perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon honey (optional)
  • Butter or oil for greasing the pan


Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or oil.
  2. In a blender, combine cottage cheese, oats, eggs, vanilla, baking powder, salt, and honey. Blend until mostly smooth.
  3. Pour the batter into the greased baking dish and smooth the top.
  4. Bake for about 20 minutes, or until the top is golden and a toothpick comes out clean when inserted.
  5. Let the pan cool for 10 minutes, then slice into squares and serve warm.

Notes

For gluten-free, use certified gluten-free oats. Substitute Greek yogurt for cottage cheese if needed.
