Description
A tender, high-protein flatbread made with cottage cheese, perfect for sandwiches, brunch, or as a pizza base.
Ingredients
- 1 cup (225 g) cottage cheese
- 1 cup (120 g) whole wheat flour
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, add the cottage cheese, whole wheat flour, eggs, baking powder, salt, and olive oil.
- Mix until a soft, slightly sticky dough forms.
- Lightly flour a work surface and roll the dough to your desired thickness (about 1/8–1/4 inch).
- Transfer the rolled dough to the prepared baking sheet and brush the top lightly with olive oil.
- Bake for 15–20 minutes until puffed and golden brown, rotating the pan halfway through.
- Let cool briefly before adding toppings, then slice and serve warm.
Notes
For a lighter texture, pulse the cottage cheese in a blender. Can substitute with Greek yogurt or a gluten-free flour blend.
