Description

A tender, high-protein flatbread made with cottage cheese, perfect for sandwiches, brunch, or as a pizza base.


Ingredients

  • 1 cup (225 g) cottage cheese
  • 1 cup (120 g) whole wheat flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp olive oil


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, add the cottage cheese, whole wheat flour, eggs, baking powder, salt, and olive oil.
  3. Mix until a soft, slightly sticky dough forms.
  4. Lightly flour a work surface and roll the dough to your desired thickness (about 1/8–1/4 inch).
  5. Transfer the rolled dough to the prepared baking sheet and brush the top lightly with olive oil.
  6. Bake for 15–20 minutes until puffed and golden brown, rotating the pan halfway through.
  7. Let cool briefly before adding toppings, then slice and serve warm.

Notes

For a lighter texture, pulse the cottage cheese in a blender. Can substitute with Greek yogurt or a gluten-free flour blend.
