Ingredients
- 1 cup cottage cheese
- 1 cup blueberries
- 1 cup rolled oats
- 2 large eggs

- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 cup maple syrup (optional)
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or similar.
- Combine the cottage cheese, eggs, vanilla extract, baking powder, cinnamon, and a pinch of salt in a mixing bowl. Whisk until relatively smooth.
- Stir in the rolled oats and then gently fold in the blueberries. If desired, add maple syrup and mix until incorporated.
- Pour the mixture into the prepared dish and smooth the top with a spatula.
- Bake for 30–35 minutes, or until the top is golden and the center is set.
- Let the bake cool for 10–15 minutes, then cut into squares and serve warm or at room temperature.
Notes
For a silkier interior, pulse the cottage cheese and eggs in a blender briefly. If using frozen blueberries, toss them in a teaspoon of flour to prevent excess moisture.
