Ingredients
- 2 chicken breasts
- 2 medium sweet potatoes
- 1 cup rice (brown rice for a healthier option)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes. Toss them in a bowl with 1 tablespoon of olive oil, salt, pepper, paprika, and garlic powder.
- Spread the seasoned sweet potatoes on a baking sheet and roast for about 25-30 minutes until tender.
- While the sweet potatoes are roasting, cook the rice according to package instructions.
- Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side until they’re cooked through.
- Once the chicken is cooked, slice it into strips.
- To serve, place a scoop of rice in a bowl, add the roasted sweet potatoes, and top with sliced chicken.
- Garnish with fresh herbs if desired, and enjoy your warm, healthy bowl!
Notes
For added flavor, let the spices marinate for a few minutes before cooking. This dish can be customized with different proteins or grains.
