Description

A quick and nutritious meal featuring ripe avocados filled with a hearty chicken salad, perfect for lunch or light dinner.


Ingredients

  • 2 ripe avocados
  • 2 cups cooked chicken, shredded
  • 1/4 cup Greek yogurt
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Lemon juice (optional)


Instructions

  1. Slice the avocados in half and remove the pits. Scoop out a little of the flesh from each half to make room for the filling.
  2. In a large bowl, mix together the shredded chicken, Greek yogurt, diced celery, red onion, and Dijon mustard. Season with salt and pepper, then stir until combined.
  3. Spoon the chicken salad into each avocado half, pressing down gently to fill them. Drizzle with lemon juice if desired.
  4. Serve immediately or chill in the refrigerator for 15–30 minutes before serving.
