A quick and nutritious meal featuring ripe avocados filled with a hearty chicken salad, perfect for lunch or light dinner.
Ingredients
- 2 ripe avocados
- 2 cups cooked chicken, shredded
- 1/4 cup Greek yogurt
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Lemon juice (optional)
Instructions
- Slice the avocados in half and remove the pits. Scoop out a little of the flesh from each half to make room for the filling.
- In a large bowl, mix together the shredded chicken, Greek yogurt, diced celery, red onion, and Dijon mustard. Season with salt and pepper, then stir until combined.
- Spoon the chicken salad into each avocado half, pressing down gently to fill them. Drizzle with lemon juice if desired.
- Serve immediately or chill in the refrigerator for 15–30 minutes before serving.
