Description

A comforting one-skillet dish of savory ground beef and tender, crispy potatoes that’s perfect for any day.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, cooking until they’re softened, about 3-5 minutes.
  3. Stir in the minced garlic and let it cook for an additional minute to release its aroma.
  4. Add the ground beef to the skillet, breaking it apart with a spatula, and cook until it’s nicely browned.
  5. Toss in the diced potatoes, season with salt and pepper, and mix everything well.
  6. Cover the skillet and let it cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and lightly crisped.
  7. Taste and adjust the seasoning as necessary.
  8. Serve hot, garnished with chopped parsley if you like.

Notes

For an extra crunch, cook uncovered for the last few minutes. Try adding spices like smoked paprika or cumin for deeper flavors.
